Breakfast in a Jiffy

I love my eggs in the morning. It gets my day started and I know I am getting a good dose of protein. I used to just fry up an egg and pop in a piece of toast. But, now I just about add anything to my eggs. Here is a recent one. Maybe you'd like to try it or create your own version. Here's the recipe:


One egg fried

Sliced tomato (I used leftover from last night's dinner)

Swiss cheese

Sauteed onions (I used leftover from last night's dinner)

Wheat toast

Mayo


Fry an egg to your liking. Toss in onions to warm and sliced tomatos. Once soft and warm, push to side. Top egg with a slice of swiss, then add your onions and tomatoes. Slather some mayo on a piece of wheat toast and top with egg mixture. Add salt and pepper. Enjoy!
